Is there a way to lock the audio timestamp for ios so that we can modify the text while relistening to our notes?

I'm sorry, but no. This is a Mac only feature. If you want to unlock your notes and modify them during playback as if you were taking notes live, you'll need to sync them to a Mac and use Pear Note for Mac to do that.
