As an attorney, I get video and audio in several different formats. I just downloaded Pear Note and tried to import a video only be to told Pear Note didn't recognize the format. it was a .DAT file. What's the deal and is there a list of accepted formats?

I'm afraid I'm not familiar with the .DAT file format.
I don't publish a list of supported formats, as audio/video files formats are actually incredibly complicated. The file type (mp4, mov, avi, etc.) is only part of the format - there's also the codecs involved, the bitrates, and more.
Pear Note supports any format that is built into OS X, which includes the majority of common formats. If Pear Note cannot open a video file, you'll need to convert it to a common format (I'd suggest mp4 or mov with h.264 video and AAC audio). Many apps can convert video formats, but Handbrake is preferred by many people (and free). I don't know if Handbrake will be able to open a .DAT file, but you could give it a try.
